This is an egg free mug cake. If you want to make this gluten-free, substitute the all purpose flour with a gluten-free flour or almond flour.

We found the batter very thick in consistency but it still cooks well. Feel free to add more liquid for a lighter sponge. We cooked ours for 60 seconds, so timing on microwave can vary. Cook it for 60 seconds, then intervals of 10 seconds until it is cooked.

Mix the dry ingredients in a mug.

Add the wet ingredients and mix.

Microwave until firm.
