  • 4 tablespoons all purpose flour
  • 1 1/2 tablespoons cocoa powder, unsweetened
  • 2 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 5 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons coconut or vegetable oil
  • 1/2 teaspoon red food coloring

Optional Cream Cheese Topping

  • 2 teaspoon cream cheese, softened
  • 2 tablespoons powdered sugar

Instructions
 

  • Choose a microwave-safe mug and make sure it's large enough to accommodate the batter as it rises (a 12 oz mug works well).
  • In the mug, whisk together the all-purpose flour, unsweetened cocoa powder, sugar, and baking powder. Make sure everything is well combined to avoid any lumps.
  • Add the milk, vanilla extract, and coconut or vegetable oil to the dry ingredients. Stir until the mixture is smooth and fully combined.
  • Add a few drops of red food coloring to the batter. Stir until you achieve your desired red color. Add more coloring if needed.
  • Microwave the mug on high for 1 minute and 15 seconds. Keep an eye on it as it cooks, since microwave power can vary. The cake should rise and set in the middle.
  • If the cake looks a bit undercooked, microwave it for an additional 10-15 seconds until it’s fully set. A toothpick inserted in the center should come out clean.
  • Allow the mug cake to cool for a minute before digging in. It will continue to set a bit as it cools.
  • For extra decadence, top your red velvet mug cake with whipped cream or a dollop of cream cheese frosting. For the frosting, mix the cream cheese and powdered sugar until smooth. Top with heart sprinkles!
