  • 1 tablespoon coconut flour
  • 1 large egg
  • 1 tablespoon Greek Yogurt
  • 2 tablespoons defrosted spinach
  • 1 tablespoon Feta cheese, crumbled
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon garlic powder
  • salt and pepper to taste

Instructions
 

  • In a microwave-safe mug, whisk the egg and Greek yogurt until smooth.
  • Stir in the coconut flour, baking powder, garlic powder, salt, and pepper.
  • Add the chopped spinach and crumbled feta, mixing until well combined.
  • Microwave on high for 60–90 seconds, or until the top is set and the mug cake has puffed up.
