Ingredients
 
 

Topping

  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • 1 pineapple ring (or chopped pineapple)
  • 1 maraschino cherry (optional)

Cake

  • 4 tablespoons all purpose flour
  • 2 tablespoons brown sugar or white granulated sugar
  • 3 tablespoons almond milk or dairy milk
  • 1/4 teaspoon baking powder
  • 1 tablespoon vegetable oil (or melted butter)
  • 1/4 teaspoon vanilla extract

Instructions
 

Prepare the Topping

  • In a microwave-safe mug, melt the butter and brown sugar (about 10 seconds).
  • Place the pineapple ring (or chunks) on top, and add a cherry in the center if using.

Make the Cake Batter

  • In a small bowl, mix flour, sugar, baking powder, and salt.
  • Add milk, oil (or melted butter), and vanilla. Stir until smooth.

Assemble & Microwave

  • Pour the cake batter over the pineapple topping.
  • Microwave on high for 1 minute 15 seconds to 1 minute 30 seconds, or until the cake is set. (Microwave times may vary.)

Cool & Serve

  • Let the mug cake sit for 1-2 minutes.
  • To serve upside-down, run a knife around the edges, place a plate over the mug, and flip it out carefully.
