Ingredients
 
 

  • 3 tablespoons almond flour
  • 1 tablespoon allulose or other low carb sweetener
  • 1 large egg
  • 1/4 teaspoon baking powder
  • 1 tablespoon coconut oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract

Instructions
 

  • In a microwave-safe mug, whisk together the almond flour, allulose and baking powder.
  • Add the egg, melted coconut oil, lemon juice, lemon zest and vanilla extract. Stir until smooth.
  • Microwave on high for 60–90 seconds, or until the cake is set and a toothpick inserted in the center comes out clean.
  • Let cool for 1–2 minutes before enjoying.
