  • 1 large egg
  • 1 1/2 tablespoons monk fruit or other sweetener
  • 2 tablespoons almond milk
  • 1 tablespoon cocoa powder, unsweetened
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons peanut butter unsweetened
  • 1/2 teaspoon baking powder
  • 1 teaspoon chocolate chips, sugar-free optional

Instructions
 

  • In a microwave-safe mug, whisk the egg. Stir in the almond milk, vanilla extract and peanut butter until smooth.
  • Mix in the cocoa powder and baking powder until fully combined. If using, fold in the chocolate chips.
  • Cook on high for 60–90 seconds, or until the cake is set but still slightly soft in the center. Cooking time may vary depending on your microwave.
  • Let it cool for a minute before digging in. Optionally, top with a dollop of whipped cream or extra peanut butter!
